Chef's Amy and Brenda at J.S. Jenks for "Back to School Picnic...

Chef Amy of the Night Kitchen Bakery, Chef Brenda, a tea expert, and students at J.S. Jenks helped to prepare a delicious snack for picnickers at the school's "Back to School Picnic". The chefs and children picked tomatoes, peppers, basil and eggplant from the school garden that was planted last May as part of the school's science curriculum. Chef Amy prepared a delicious chicken and vegetable soup with Jenk's garden tomatoes, eggplant, peppers and herbs. Chef Brenda prepared a pepper and yogurt topping on toasts. The children helped wash and prepare the veggies for about 30 families at Jenks. The food was delicious and everyone went home with a full belly and a better understanding of where our food actually comes from!

Our James Beard Brunch

The Night Kitchen team was asked to create a Brunch at the James Beard House in New York City last month. The sold out event was a tremendous success. The guests loved the food and were extremely appreciative. We created a menu that highlighted Night Kitchen dessert favorites like Sticky Buns, Gorgonzola Walnut Scones, Shortbread Cookies and Iced Brownies and paired them with savory foods like Bacon and Leek Strata, Spring Pea Soup and Braised Jamison Farm Lamb Shanks. The team of chefs were Night Kitchen's Alex Kujawa, Jen Low, Amy Edelman and John Millard plus Alex's Chef husband Chris Kujawa and Jen's Chef husband Sean Williams. It is quite an honor to be asked to cook at the James Beard House. We were happy to participate and contribute to the fundraising efforts of the James Beard Foundation that provides education and scholarship opportunities for budding Chefs.

Night Kitchen Tests Beard House Menu

The chefs-couples at Night Kitchen who made it happen (from left): Sean Williams and Jen Low, Alex Kujawa and Chris Kujawa, and John Millard and Amy Edelman (MICHAEL KLEIN / Philly.com

By Michael Klein
It's a great honor for chefs and restaurants to be asked to cook at the James Beard House in New York City. They get a date, plan a menu, secure the ingredients, truck the stuff up there, cook for an audience of food-forward folks, clean up, and come back.
If you're a large restaurant - as are most Beard attendees - it's not such a big deal.
But if you're a small bakery accustomed to feeding a dozen or so people at a time in a storefront on Germantown Avenue, you may feel that a dry run is a smart idea.
Which brought a few dozen of us to Night Kitchen Bakery on Sunday night, March 17 for a dress rehearsal of its Beard dinner on April 14.
Most Beard meals are dinners, which mean that the chef and staff arrive in the morning and have all day to prep and cook.
Not so for the Night Kitchen.
Owners-spouses Amy Edelman and John Millard plan to set out at 4 a.m. that day, arrive shortly before dawn, and have everything ready for a noon brunch.
Sunday night's test "brunch for dinner" - for which tables and chairs were crammed into the bakery - started with passed hors d'oeuvres: duck breast on orange-infused carrot cake, miniature sticky bun, and gorgonzola walnut scones.
No fancy cutlery and plates, so we had to rough it.  #firstworldproblems
We used plastic spoons to lap up spring pea soup with crab cake served in plastic bowls. Delightfully rich egg strata with lardons, grilled leeks, and fontina came out in porcelain ramekins. But the hit of the meal - the braised Jamison Farm lamb, potato pancake stuffed with Shellbark Hollow goat cheese, fava beans and spinach - came out on plastic. The wines from Constellation Wines were poured into plastic.
The banana cream chocolate tart and dessert sampler of Key lime, iced brownie, salted caramel and coffee cake hit the spot.
Edelman says they'll make a few small refinements, and will add challah French toast with strawberry/rhubarb jam to the menu.
If you're up for the brunch, it's $95 a head; info here.

Pudding Is The New Cupcakes

One of these days, something is going to have to come along and knock the cupcake off its pedestal as the world’s most overdone cutesy food trend. And right now, Amy Edelman from Night Kitchen Bakery in Chestnut Hill is hoping that pudding is going to be that thing.
Not crappy pudding. Not the kind of stuff you get in the single-serve cups at the grocery store or the gooey, Jell-O-based quasi-desserts of yesteryear. But handcrafted artisan puddings, made from real ingredients and available in flavors other than chocolate and white.
Edelman is doing Key lime, banana creme, butterscotch and coffee pot de creme varieties, among other, and letting them go for $5 or $6 apiece. She launched the new desserts at the beginning of the month, so if you feel like striking a blow at the cupcake hegemony, get there now and order big.
Oh, and as a bonus? It’s Restaurant Month in Chestnut Hill, and Night Kitchen is running a lunch special. $9.95 gets you two tea sandwiches, a cup of coffee or tea and a shortbread cookie. Add a pudding to that deal and walk out the door stuffed full of sugar and sandwiches for just $15 or so.
